Doubles are a common vendor stand item. They are eaten for breakfast or lunch. You can buy them all over Trindad and Tobago. The fry bread looking part has mango in it for sweetener. You can see the strings that are found in the mangoes when you bite into it. The insides are mostly chick peas (channa) with all kinds of spices, etc. for flavor. They come in mild, medium and hot. They are a little spicy for me, even in the mild version. Elder Walker, an AP, says it was that way for him at first but now he gets the spicy ones. He accidently ate one of the mild ones last time we did a doubles run and thought is was really blah. When the new Elders come to the mission, they are taken to a stand that has the "best doubles" in Trinidad a mile or so from the office. Like everything else, you can find ones that aren't as good. We have to dodge around a man with his cool boxes full of them selling them at the sidewalk by Valpark Plaza most mornings.
